Comforting Cauliflower Baked Oats (vegan + gluten-free)

These baked oats are sure to blow your mind with the addition of CAULIFLOWER! They’re so sweet and delicious, you won’t even notice they’re packed with 1/2 cup of veggies!

Y’all know I love my oats. If there weren’t so many other delicious breakfast foods (I’m talking to you, pancakes, toast, and homemade jam), I would eat oatmeal every. single. day. There’s just something about oatmeal that warms my heart. Especially in these cold winter months, oatmeal has definitely made itself a daily staple!

Another reason I love oats is because they are like a blank canvas; you can decorate them any way your heart desires! But unlike a blank canvas on which you can only add colors and textures to the surface, you can also change the actual ‘oat canvas’ itself by switching up the way you cook the oats. Milk or water, protein powder, sweeteners, fruit, veggies—the list is endless! And then not to mention, stovetop, oven, microwave…

My personal favorite way to do oats is with my Vanilla Cauliflower Protein Oatmeal. They’re so incredibly creamy and delicious, I’m sure I’ve eaten it over a thousand times by now! But the best part is, they’re packed with 1/2 cup of veggies that you don’t even notice! If you haven’t tried it yet, I highly recommend you try it at your next breakfast—no wonder it’s my most searched recipe on the blog!

Once in a while I do crave baked oats over stovetop though. Sometimes ya gotta switch it up, ya know! I usually don’t have time for baked oats in the morning due to school, but since it’s vacation, I’ve had so much more time to make myself something a little more luxurious ;)

This morning was one of those mornings on which I was craving baked oats. While I was pondering what flavor to make, I realized I had never made baked oats with cauliflower 😱. Considering the amount of times I have made cauliflower stovetop oats, I honestly couldn’t believe I had never added them to baked oats.

I immediately knew my current task: baked oats with cauliflower!

I was truly astonished at how good they turned out on simply the first try. So incredibly sweet and delicious! I even forgot I had added cauliflower as I was eating them…that’s a plus, right?! As you can imagine, I couldn’t wait to share this new recipe with you all! So lo and behold, COMFORTING CAULIFLOWER BAKED OATS!

Comforting Cauliflower Baked Oats (vegan + gluten-free)

These baked oats are sure to blow your mind with the addition of CAULIFLOWER! They’re so sweet and delicious, you won’t even notice they’re packed with 1/2 cup of veggies!

Ingredients

  • 1/2 cup old-fashioned oats (make sure they are certified gluten-free for allergies) (45g)

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon cinnamon (optional)

  • 2 tablespoons plant-based vanilla protein powder (12g)

  • 1/2 cup cauliflower rice (50g)

  • 1/2 banana, mashed (~50g)

  • 1/2 cup unsweetened almond milk (120mL)

  • 1/2 cup blueberries (60g)

Instructions

  1. Preheat oven to 350˚F (180˚C) and lightly grease an oven dish or ramekin with coconut oil or cooking spray.

  2. In a small bowl, combine the oats, baking powder, cinnamon (if using), and protein powder.

  3. Add the cauliflower, banana, and almond milk. Mix well.

  4. Gently fold in the blueberries, saving a couple for topping.

  5. Transfer the oat mixture to the greased oven dish and top with remaining blueberries.

  6. Bake in preheated oven for 40-45 minutes and allow to cool 5 minutes before eating.

  7. Serve with nut butter of choice and enjoy!
