Easy Vegan Sushi (gluten-free)

If you are a sushi fan, this recipe is for you! It’s a super fun and colorful way to switch up your typical lunch or dinner, but also makes for a delightful savory snack.


Omg you guys. I made sushi for the first time! I gotta be honest, it was a little scary, and I’ve been putting it off for a while now. I always imagined sushi-making to be such a difficult and time-consuming process, but I couldn’t have been more wrong! In total, the sushi takes less than 30 minutes to come together, and really only 10 if you’ve already cooked your rice!

What inspired me to make this sushi is the fact that I’ve been trying to incorporate more variety into my life. I notice I get really hooked on routine, but honestly that just gets boring at some point! ;) So not only am I making a new lunch/dinner recipe, but I’m actually posting a lunch/dinner recipe! If you’re an OG instagram follower and/or have been checking out my blog for a while now, you know 95% of my posts are of breakfast😉


Back to the sushi! Another reason I decided to make this specific recipe is because it’s honestly really hard to find sushi that isn’t made with animal products. Sure, you can order your cucumber or carrot roll, but to me that’s just incredibly boring! And then we’re also not even talking about the fact that you wouldn’t be getting any main source of protein.

That brings me to why I LOVE this easy sushi recipe; it’s so incredibly versatile! You can add whatever veggies you like, and pack it with plant-based protein flavored and prepared to your liking :) For this batch, I used cucumbers, julienned carrots + beets, and added some tofu that I fried in sesame oil for protein!

Not only did this combination of ‘fillings’ taste absolutely FABULOUS, but I also love how colorful it made the sushi! I honestly couldn’t resist snagging multiple ‘rolls’ of sushi before taking these photos…thank GOODNESS this recipe is so quick + easy, so I was able to make a couple more batches😂

The easiest part of the whole process though? The fact that the company TerraSana provides everything you need to make the sushi, from the essential ingredients to the sushi mat!


TerraSana is one of my favorite brands out there, because they are a 100% organic, all-natural company based in the Netherlands that has products for just about anything! I buy (almost) all my nut butters, superfoods, nuts&seeds, flours, and of course sushi necessities from their brand!

If you live in the Netherlands, you can find TerraSana products in really any organic grocery store, but there’s also dozens of online stores that carry their products! I know that eating organic or eating lots of ‘superfoods’ can get expensive at times (especially if you’re shopping on a budget), but it’s also something I prioritize because it’s just so much better for you AND the planet. Knowing that my foods are being cleanly sourced and that I’m getting the most pure product out there honestly just makes healthy living that much easier!

Easy Vegan Sushi (gluten-free)

Yields 1 roll (8 pieces)

If you are a sushi fan, this recipe is for you! It’s a super fun and colorful way to switch up your typical lunch or dinner, but also makes for a delightful savory snack.


For the rice

  • 1/4 cup sushi rice (50g)

  • 1 cup water (240mL)

  • 1/4 teaspoon salt (1g)

For the tofu

  • 3 oz tofu, firm or extra firm, sliced into strips (85g)

  • 1 teaspoon sesame oil (could sub other oil, but I like the flavor sesame oil gives!) (5mL)

Everything else

  • 1 sushi nori sheet (2.5g)

  • 1/2 cup cucumber strips (100g)

  • 1/4 cup julienned carrot (25g)

  • 1/4 cup julienned beet (25g)

  • black sesame seeds, for garnish

  • shoyu or soy sauce, for dipping


1. Add the rice, water, and salt to a saucepan and bring to a boil. Reduce heat to low and allow the rice to simmer until done, about 20 minutes.

2. While the rice is cooking, you can prepare the tofu and arrange your filling ingredients.

3. To make the tofu, heat a skillet or pan on medium high heat. Once hot, add the sesame oil and tofu.

4. Stir-fry the tofu until the edges are golden brown and slightly crispy, 3-5 minutes total.

5. When your rice and tofu are both done, you can start rolling your sushi! Start off by laying the nori sheet on your sushi mat.

6. Add the rice to one side of the nori sheet, as pictured below.


7. Top the rice with the cucumber, tofu, carrot, and beet.


8. Roll it all up, slice, and top with black sesame seeds. Serve with shoyu and enjoy!
