Fluffy Paleo Pancakes (gluten-free)

Homemade paleo pancakes, where have you been all my life?

If you live in the United States and are a foodie like me, you’ve probably tried MANY pancake mixes before. They’re only all the rage in my foodie community on instagram, Usually you only have to add milk or water, which makes preparation a breeze.

Truth be told though, the mixes can be expensive. But with this homemade paleo pancake mix, it only takes an extra 5 minutes, tops!

And I’m sharing it with all of YOU so you can experience the same joy as I did this morning when I created paleo pancakes that taste just like my favorite mix, but don’t blow up my bank account!

These pancakes require just a few simple ingredients:

  • cassava flour

  • coconut flour

  • almond flour

  • baking powder

  • protein powder

  • egg

  • nut milk

Cassava flour can be tough to find, especially if you’re looking in the regular grocery store. I recommend purchasing off Amazon if your in the States, or I purchase mine from PuurMieke in the Netherlands! If you really don’t want to use cassava flour, you could try subbing additional almond flour. I have not, however, tested this option so can’t guarantee any results! If you do happen to make this recipe with almond flour instead of cassava, let me know so I can update this post ;)

I also always add a couple tablespoons of plant-based protein powder to my pancakes, whether I’m using a boxed mix or making them from scratch. That way, I feel more satisfied and breakfast keeps me fuller for longer. My favorite brand of protein for these pancakes is Nuzest Clean Lean Protein. Not only is it plant-based AND paleo, it’s also absolutely delicious! I prefer using the ‘smooth vanilla’ flavor as I find it adds a gentle sweetness that makes these pancakes just a little more amazing :)

Fluffy Paleo Pancakes (gluten-free)

Cook Time 5 minutes

Fluffy Paleo Pancakes for the perfect pancake breakfast!

Ingredients

  • 2 tablespoons cassava flour (12g)

  • 2 tablespoons coconut flour (14g)

  • 1 tablespoon almond flour (7g)

  • 1/4 teaspoon paleo baking powder (or regular baking powder if not strictly paleo)

  • 2 tablespoons protein powder (12g)

  • 1 large egg (I use pasture-raised)

  • 1/4-1/3 cup nut milk (60-80mL)

Instructions

  1. In a medium sized bowl, whisk together the flours, baking soda, and protein powder.

  2. Whisk in the egg and add nut milk until a batter forms.

  3. Let batter sit for about 5 minutes to thicken.

  4. Meanwhile, preheat griddle or pan on medium low heat.

  5. Once the batter has sat for five minutes, melt coconut oil on heated surface.

  6. Spoon the batter onto the hot surface and cook for 1-2 minutes on medium low heat, or until edges are golden brown.

  7. Flip, and cook for an additional minute or so.

  8. Transfer to a plate and top with your favorite toppings!
