Fluffy Vegan Chickpea Pancakes (gluten-free)

These fluffy chickpea pancakes are so easy to make and are incredibly delicious. They require just 4 ingredients and are vegan, grain-free, gluten-free, nut-free and sugar-free, all thanks to the magical powder which is chickpea flour!

Happy Spring everyone! I know I’m a day late, but I’m making it up to you with these incredibly Fluffy Vegan Chickpea Pancakes! Just look at them! You’ll have to forgive me now :)

If you’ve been hanging around here for a while or have been following me on instagram, you know this isn’t the first time I’ve presented you with a recipe featuring chickpea flour. It’s not even the first time I post a pancake recipe made with chickpea flour, for that matter! The other chickpea pancake recipe on the blog is my Blueberry Chickpea Pancakes, which are like actual cloud pillows…but they’re not vegan as they contain egg, which means I, as well as many of YOU, can’t enjoy them. That’s a HUGE shame because fluffy chickpea pancakes are simply amazing, so I accepted the challenge of making chickpea pancakes that not only taste like cloud pillows, but are also 100% vegan!

In case the photo doesn’t speak for itself, I’m here to tell ya these pancakes were a GREAT SUCCESS! 👏For some reason, I always thought that vegan pancakes couldn’t be fluffy and that you absolutely needed eggs for that. But I was so so SO wrong! The magical properties of chickpea flour create an extremely fluffy cake without needing to add a single egg.

These pancakes were actually born out of me wanting to experiment with different flours and their rising/fluff properties when keeping the recipe vegan. I’ve found coconut flour to be incredibly challenging (unless using a minor amount in combination with another flour), because coconut absorbs so much moisture that eggs supply perfectly.

I often include a bit of coconut flour in most of my (pancake) recipes because it really amps that fluff factor UP, but you will not find it in these Fluffy Vegan Chickpea Pancakes! On it’s own, chickpea flour really provides so much fluff, it’s actually kind of unbelievable 😮

But you can BELIEVE me on this one, because you can get ALL this fluff with just a bowl, a whisk, and FOUR simple ingredients (technically 5, but oil for the pan doesn’t count)! I’m also not counting the amazingness which is TOPPINGS!

For this stack, I topped with my favorite 2-ingredient raspberry chia jam and a drizzle of my favorite drippy almond butter. I swear, this was heaven on EARTH! Trust me, you’ll want to make this recipe for yourself!

Fluffy Vegan Chickpea Pancakes (gluten-free)

These fluffy chickpea pancakes are so easy to make and are incredibly delicious. They require just 4 ingredients and are vegan, grain-free, gluten-free, nut-free and sugar-free, all thanks to the magical powder which is chickpea flour!

Ingredients

  • 1/3 cup chickpea flour (40g)

  • 1/2 teaspoon baking powder (1g)

  • 2 tablespoons vegan protein powder (12g)

  • 1/4 cup + 3 tablespoons plant milk (100mL)

Instructions

  1. Preheat a skillet or griddle on medium heat.

  2. In a bowl, whisk together the flours, protein powder, and baking powder.

  3. Add almond milk, and mix until a smooth batter forms.

  4. Melt some coconut oil on your skillet or griddle, and scoop batter onto greased surface.

  5. Cook for 1-2 minutes on each side, or until slightly golden brown on the edges.

  6. Repeat with remaining batter and serve with toppings of choice!
