No Bake Peanut Butter Protein Bars (3 ingredients!)

Peanut butter cookie meets protein bar in these no bake, fruit sweetened, peanut butter protein bars that are vegan and gluten-free!

Raise your hand if you like peanut butter cookies! 🙋‍♀️🙋‍♀️🙋‍♀️If I had eight arms, I’d be raising them all so each hand could get one of these no bake peanut butter protein bars!

Lately, I’ve been obsessed with dates. Obsessed as in, I get cravings for that sweet, soft, and oh-so-satisfying fruit that is basically nature’s candy. What I’ve been even more obsessed with is dipping them in nut butter. And that, my friends, is how these bars were born!

I’m a huge snacker when it comes to eating. Being an active girl on a busy schedule, I rely on quick, nutrient packed snacks that also taste good! And when I say nutrient packed, I mean a snack that has a good balance of carbs, protein, and fat. These peanut butter protein bars are just that!

There’s so many different kinds of protein bars on the market nowadays, it can get really overwhelming to choose! Especially since you can’t really rely on product packaging anymore. I see so many bars being labeled as ‘healthy’ and ‘all-natural’ while being packed with artificial flavors, sweeteners, and other gut-ruining additives! And the worst part, they’re SO expensive!

These bars are my answer to the additive-loaded-expensive-protein-bar dilemma. They’re made with REAL FOODS and only require THREE ingredients (unless you count water as an ingredient). Plus, they require minimal prep time and are ready to eat in just an hour time! All of that, while tasting like a peanut butter cookie. I don’t think anything can beat that!

All you need is:

medjool dates

peanut butter

unflavored protein powder

water

The reason I specify an unflavored protein powder is because these bars are plenty sweet on their own, thanks to the dates. No Bake Peanut Butter Protein Bars (3 ingredients!)

Yields 8 bars
Prep Time 10 min
Chill Time 1 hours
Total Time 1 hours, 10 min

Peanut butter cookie meets protein bar in these no bake, fruit sweetened, peanut butter protein bars that are vegan and gluten-free!

Ingredients

  • 8 medjool dates, pitted (160g)

  • 1/2 cup creamy peanut butter (120g)

  • 1/2 cup unflavored protein powder (60g)

  • 1/2 cup warm water (120ml)

Instructions

  1. Lightly grease a loaf pan and line with parchment paper. Set aside.

  2. Add all ingredients to a food processor and blend until a ball of dough forms.

  3. Using your hands, press dough into the lined loaf pan.

  4. Pop the loaf pan in the fridge for 1 hour to allow the bars to firm up.

  5. Slice into 8 bars (i did squares!) and enjoy!
