Peanut Butter Cookie Balls (2-ingredients!)

Friends, meet my new favorite snack: Peanut Butter Cookie Balls! Not only are they super healthy and insanely delicious, but they literally are the EASIEST thing you will ever make. We’re talking two ingredients and the press of a button…literally! Have I convinced you to make these yet?
I’ve been going through a lot of dates and nuts recently. Being someone who needs a lot of fuel, I always make sure I have nutrient-dense snacks on hand! Unfortunately, pre-packaged health bars can be incredibly pricey, so I’ve gotten into the habit of making my own. Before I really knew how, I always told myself I ‘didn’t have the time’, not to mention I had no idea what to put in them…until I discovered the most magical ingredient being the amazing DATE!
Just like these snack balls, dates have so many nutritional benefits. They contain several vitamins and minerals, are high in fiber, and even contain antioxidants! Plus, their low glycemic index makes them a perfect all-natural sweetener for really anything! Now you understand why I use some form of dates in my Sweet Potato Brownies, Raw Vegan Superfood Brownies, and No Bake Peanut Butter Protein Bars…
There’s several different types of dates available on the market nowadays, but my ALL TIME FAVORITE are Yogi & Yousef’s Dalia Sukkary Dates. This specific type of date has its origins in Saudi Arabia, and is lusciously soft with a sweet, caramel flavor that is just heavenly. Aside from dates, the other ingredient you’ll need is some peanuts! I bought a bag of peanuts and removed all the shells by hand (way cheaper than buying shelled!), but feel free to use whatever you have on hand. You could even use almonds or cashews to make these paleo, but that would technically take away the ‘peanut butter cookie’ theme I’m so in love with ;) But hey, I’m all about doing what suits YOU, so feel free to adjust to whatever suits your needs!
Speaking of which, I am a sucker for salt. Now before you play the ‘sodium is bad for you’ card on me, don’t worry! I’m not a salt addict nor do I consume excessive amounts of sodium. What I mean is, I think salt is like sprinkles on the cake. It’s always my finishing touch to anything sweet (especially chocolate, who’s with me?), as I find it really brings out not only the flavor, but the sweetness as well!
I add a pinch of salt to the ‘dough’ when making these peanut butter cookie balls, but feel free to omit if you don’t feel the need to, or if your peanuts are already salted. The salt is in fact optional, keeping this recipe a 2-ingredient one!
Now that you know how minimal the ingredients are, let’s get to making em’! As I said earlier in this post, it’s as easy as the press of a button. Okay, there’s some rolling involved too ;) But seriosuly, that’s all! Like I said, these couldn’t be easier to make.
To make these Peanut Butter Cookie Balls, you first want to puree your dates into a smooth paste. Alternatively, you can use Yogi Yousef’s Date Spread and skip this step! Then, you’ll add your peanuts and pulse until you get a somewhat chunky ‘dough’. You may be wondering, why not add everything all at once? I’ll tell ya friends!
From experimenting with this recipe, I’ve found that pureeing the dates first and then adding the nuts allows the balls to have consistent small peanut ‘pieces’ throughout, as oppose to a monotone date-peanut puree. Of course, if you prefer this, go your gang! It’s a judgement free zone over here :) If you’re using salted peanuts, you likely won’t need additional salt. If you’re using unsalted peanuts like I did, feel free to add the pinch of salt right in with the nuts. Or not—again, you do you!
When you’re all done making the dough, it’s time to rock and ROLL, baby! Simply divide into 8 pieces and use your hands to roll into balls. I couldn’t WAIT to try one right at this point, so I dove right in and enjoyed one of my balls! I then popped the rest in the fridge so they could firm up a bit.

Peanut Butter Cookie Balls (vegan, gluten-free, refined sugar-free)

Two simple ingredients is all you need to make these nutrient-packed peanut butter cookie balls! They’re the perfect sweet snack for anytime of day, while being vegan, gluten-free, and refined sugar-free.
1 1/4 cups dates, pits removed (200g)
3/4 cup shelled peanuts (120g)
pinch sea salt optional
Add dates to a food processor and pulse/blend until you have a smooth paste. Alternatively, you can use 200g date paste and skip this step!
Add the peanuts, and pulse or mix until combined. You want there to be consistently small pieces but not overly processed.
Use your hands to roll the dough into eight ball.
Pop in the fridge for 30 minutes to set, or eat as is! Balls keep in the fridge for up to a week, or in the freezer for several months!
