Raw Vegan Superfood Brownies

These Raw Vegan Superfood Brownies are the perfect brownie recipe for when you don’t feel like using your oven. They require only 7 ingredients are are super easy to make! Vegan, paleo, gluten-free, refined sugar free for a healthy and delicious chocolate indulgence.

I can’t believe this is my first brownie recipe on the blog! I guess I’ve been so obsessed with making my Double Chocolate Mug Cake, that brownies were never really a priority. I honestly can’t believe I just wrote that, because brownies should always be a priority😂Or anything chocolate for that matter!

I am a HUGE chocolate lover. Like I absolutely cannot get through my day if I don’t have chocolate at least once. Recently, I’ve also become obsessed with dates, which is also why I made my No Bake Peanut Butter Protein Bars a little while back!

Whenever I eat dates, I always like to shmear a little something on them—nut butter, nutella, or if I have the patience, I love to dip them in chocolate and stick em in the freezer for 15 minutes 😋The latter has been something I’ve been craving everyday lately, so I figured I might as well make a big batch of something involving chocolate and dates! What better way to do that than with some Raw Vegan Brownies?

These brownies are SO incredibly easy to make. I’m talking as easy as pressing the button on your food processor! Plus, they’re made with simple, whole food ingredients that all happen to be superfoods! So not only can you indulge in these sweet, melt-in-your-mouth chocolatey squares when you’re in need of a chocolate fix, you can feel GOOD about it too! In fact, they’re suitable for anyone following a (raw) vegan, paleo, or gluten-free lifestyle :)

But what makes these brownies so healthy? Let’s get to the ingredients!

Ingredients for Raw Vegan Superfood Brownies

Pitted Dates: I didn’t specify a type of date here, because honestly they all work! Just make sure they’re soft to the touch, others they won’t provide any ‘stick’ to your brownie dough. If your dates are hard, just soak them in boiling water for about 10 minutes and they’ll be good to go! If your dates still have pits in them (such as Medjool dates), be sure to de-pit them prior to using!

Almonds & Cashews: You’ll need about 100g of raw nuts for this recipe. I love both almonds & cashews, so I used them in a 1 to 1 ratio! If you’re allergic, don’t like, or simply don’t have these on hand, feel free to sub in any other nut! Try walnuts for an extra decadent brownie, or hazelnuts for a nutella-type brownie!

Raw Cacao Powder: I love using raw cacao here because of the abundance of health benefits this superfood packs. In contrast to cocoa powder, raw cacao is not heated at high temperatures, and thus retains all of it’s nutritional properties. However, feel free to sub in regular cocoa powder if you want a more intense chocolate flavor!

Hemp Protein Powder: Packs a protein punch in these brownies! Hemp protein is a complete protein, meaning it contains all nine essential amino acids. The taste is slightly nutty, which I find goes really well with the chocolate and dates! Feel free to add in your favorite protein powder or oat flour if you don’t have hemp protein powder.

Goji Berries: I had honestly never tried goji berries before I wanted to make this recipe! I love the combination of chocolate & berries however, so I thought why not give them a try??? I feel the addition of goji berries truly makes these SUPERFOOD brownies because of the impressive health benefits they provide. Goji berries are incredibly high in antioxidants and have immune-boosting properties!

Sea Salt: If you’re like me, you love your sea salt! I don’t add any salt to the batter itself, but rather enjoy sprinkling on top of the finished brownies for the final touch ✨

How to Make Raw Vegan Superfood Brownies

These brownies honestly couldn’t be easier to make! All you need is your ingredients, a good food processor, and a loaf pan!

First thing you’ll need to do is lightly grease a loaf pan with some coconut oil or cooking spray, and line with parchment paper. This is to prevent your brownies from getting stuck!

Set your pan aside, then add all your ingredients to your food processor. Start by pulsing your ingredients to get them a little smaller, then switch to continuous blending until a ball of dough forms. You may or may not need 1-2 tablespoons of warm water near the end if your ingredients are having difficulty forming a dough.

Once you have a sticky ball of dough, press evenly into your lined loaf pan. Stick in the fridge for about an hour to firm up, then slice into squares and enjoy!

Easy as pie, right? Or should I say, easy as a brownie? ;) Enjoy my loves!
