This red velvet smoothie bowl is not only thick, creamy, and flavorful, it’s also an antioxidant bomb that’s packed with plant-based protein! All while being pretty in pink :)

I am beyond excited to be sharing the recipe for this Red Velvet Smoothie Bowl with you guys! In fact, I’m just beyond excited about this smoothie bowl in general. It’s my FIRST smoothie bowl of 2019, that deserves a celebration right? But instead of celebrating with cake, I’m celebrating with a cake-themed smoothie bowl!

I’m honestly not a huge smoothie bowl person (hello oatmeal and pancakes 👋), but with the temperature in the 60’s and the sun shining so bright, I couldn’t resist! And after making this smoothie bowl, I’m pretty sure there’s going to be a lot more coming! 😉

This is definitely not your average smoothie bowl. It’s much better than that! Why? Because it’s packed with the amazing superfood that is BEETS! You might be thinking: beets? In a smoothie? But you’re just going to have to trust me on this one. The combination of earthy beets, sweet raspberries, and chocolate is just absolutely dreamy. Plus, beets are so incredibly nutritious, being high in immune-boosting vitamin C, key minerals like potassium and manganese, as well as the B vitamin folate and plenty of fiber!

When I make smoothie bowls, I always add a scoop of vegan protein powder. Not only does it pack a protein-punch, but it’s what helps make the smoothie thick and creamy. For this recipe I used a chocolate protein, as it really intensifies the chocolate flavor and adds additional sweetness to neutralize the earthiness of the beets. I recommend either Nuzest Rich Chocolate, LivWell Raw Cacao, or Pure Food Protein Raw Cacao. You can find the codes for all of these brands on the favorites page of this blog!

Red Velvet Smoothie Bowl {vegan}

This red velvet smoothie bowl is not only thick, creamy, and flavorful, it’s also an antioxidant bomb that’s packed with plant-based protein! All while being pretty in pink :)

Ingredients

  • 2-3 small frozen beets, chopped (225g)

  • 1/2 cup frozen raspberries (60g)

  • 2 tablespoons vegan chocolate protein powder (12-15g)

  • 1 tablespoon raw cacao powder (7g)

  • 3/4 cup plant-based milk of choice (180mL)

topping ideas:

  • fresh fruit such as raspberries, blueberries, sliced strawberries, kiwi, banana

  • seeds such as chia, hemp, flax, pumpkin, sunflower

  • nut butter (almond is my fav with this combo, but could also go for seed butter if nut-free

  • granola or cereal

  • cacao nibs

Instructions

  1. Add all smoothie ingredients to a high-powered blender and mix until smooth and creamy. You may need to stop blending repeatedly to scrape down the sides. Try not to over-mix or leave running in blender as the heat will melt it and it won’t be as thick.

  2. Transfer to a bowl and top with whatever you desire!
