Steel-Cut Cauliflower Protein Oatmeal (vegan + gluten-free)

Does anyone else completely warm up inside at the thought of a warm bowl of oatmeal on a chilly morning? Yeah, me too. Especially when we’re talking steel-cut oats. There’s just something about the nutty flavor and chewy texture that gets me to eat breakfast with a huge smile on my face :)

Even though they’re absolutely delicious, I don’t make steel-cut oats too often. Or should I say didn’t make steel-cut oats too often? Because if you follow me on instagram, you know they’re practically my breakfast everyday now!

The reason I avoided steel-cut oats for so long is because they take forever to cook. Like seriously, who wants to stand in the kitchen stirring oatmeal for 30+ minutes? Not this girl! Don’t worry though, I’ve got a special trick for that! Thanks to a quick boil the evening before, these steel-cut oats come together oh so quick the next morning. If that’s not pure magic, I don’t know what is!

What makes these oats even more magical is the addition of riced cauliflower and protein powder, just like in my Vanilla Cauliflower Protein Oatmeal. In fact, this steel-cut version requires the same ingredients, except for a different type of oats! I was originally going to add the steel-cut method to the original post, but then realized this steel-cut version needed its own post. It’s just that good!

The cooking method for this recipe is a bit different from my OG Vanilla Cauliflower Protein Oatmeal. Whereas you can cook rolled oats within 10 minutes on the spot, this recipe for cauliflower steel-cut oats requires boiling the oats the night before and letting them sit overnight. This special trick is what makes these oats super quick to make in the morning!

Steel-Cut Cauliflower Protein Oatmeal (vegan + gluten-free)

Total Time 20 min + overnight

Are you ready to get your oatmeal upgraded to the next level? Inspired by my vanilla cauliflower protein oats, this steel-cut version is sure to be your new go-to!

Ingredients

  • 1/4 cup steel-cut oats (certified gluten-free for allergies) (40g)

  • 1 cup unsweetened almond milk (240mL)

  • 1/2 cup cauliflower rice (50g)

  • 2 tablespoons plant-based protein powder (12g)

  • optional: spices to taste

Instructions

  1. Add the oats and almond milk to a saucepan and bring to a rapid boil. Allow to boil for 1-2 minutes, stirring as necessary to make sure the oats don’t boil over.

  2. Remove from heat, cover with a lid, and let the oats sit out on the stove overnight, unrefrigerated.

  3. In the morning, add the cauliflower rice and heat the oats on low, stirring every minute or so.

  4. Once the cauliflower oatmeal is fully heated through, whisk in your protein powder and optional spices.

  5. Transfer oats to a bowl and top with whatever you like!
