Sweet Potato Protein Waffles (paleo + gluten-free)

Sweet potatoes and waffles combined into one, for a fluffy, satisfying, and delicious breakfast!

Do you ever wake up with breakfast on your mind, but not able to choose between two different breakfast ideas? Well that's exactly what happened to me this morning. 

My body was craving sweet potato, but I also really wanted a plate of fluffy waffles. I was leaning towards the waffles, simply because I didn't want to wait for a sweet potato to cook. So, I went into the kitchen and rummaged through my flour cabinet, trying to find inspiration for the kind of waffles I wanted. Because yes, this is a whole nother area of decision making ;). 

Then, I saw a bag of Sweet Potato Flour that I had totally forgotten about! How could this be? Right there and then, my idea for Sweet Potato Waffles was sparked.  

Whenever I cook with a flour that doesn't have gluten in it (to bind the recipe together) I like to add a combination of coconut flour + egg. I actually prefer this mixture because it makes whatever you're making so incredibly fluffy

I also like to add a scoop of plant-based protein powder to my morning stack, because not only does it add protein to keep me fuller and more satisfied, but it also adds a delicious vanilla flavor that makes the pancakes all the more drool-worthy

Before I make you drool over your computer screen, I'll stop rambling now and go ahead and give you this amazing recipe!

Sweet Potato Protein Waffles (paleo + gluten-free)

Sweet potatoes and waffles combined into one, for a fluffy, satisfying, and delicious breakfast!

Ingredients

  • 2 tablespoons sweet potato flour (14g)

  • 2 tablespoons coconut flour (14g)

  • 1/4 teaspoon baking soda

  • 2 tablespoons plant-based protein powder (12g)

  • 1 large egg (I used organic pasture-raised)

  • 1/2 cup unsweetened almond milk (120mL)

Instructions

  1. Preheat waffle iron.

  2. In a medium sized bowl, whisk together the flours, baking soda, and protein powder.

  3. Add the egg and almond milk, and mix until a smooth batter forms.

  4. Melt coconut oil or butter onto waffle iron and spoon batter onto greased surface.

  5. Cook until done and repeat with remaining batter.

  6. Transfer to a plate and top with whatever you desire!
