Vanilla Cauliflower Protein Oatmeal gone grain-free! This oat-less version of my favorite breakfast is paleo-approved while remaining vegan and gluten-free.


Hi friends! I feel like it’s been a while since I last shared an oatmeal recipe on here, which is crazy considering oatmeal is one of my favorite things ever! I blame it on hot summer weather…a cold and frosty smoothie bowl has been my go-to recently. A few weeks ago was especially insane. We had the worst heat wave here in Europe!

Luckily, it’s been cooling off (does anyone else think that’s weird, given we’re in mid July?) so my other breakfasts have been making their comeback! You bet copious bowls of my Vanilla Cauliflower Protein Oats are involved ;). It’s not for nothing that’s one of the most popular recipes on the blog.

With that said, I want everyone to be able to enjoy the recipe! Sure it’s vegan and gluten-free, but unfortunately not suitable for those following a paleo or Whole30 diet, or even just avoiding grains for other reasons. So that’s why I decided to create a grain-free version. One that can be enjoyed by all!


Ingredients for Vanilla Cauliflower Protein N’Oatmeal 

The ingredients for this recipe are pretty similar to the ingredients of my original oatmeal recipe, but I’ve made some minor tweaks and obviously took out the oats! The ‘oatmeal’ is made by using a base of cauliflower rice and nut milk, and uses coconut flour and plant-based protein powder to get that thick and creamy consistency.

Cauliflower Rice: you can use fresh or frozen, pre-packaged or homemade. Anything goes, really! I always have homemade cauliflower rice stored in Ziploc Bags in my freezer, so that’s what I like to use here.

Nut Milk: again, anything goes here! I have successfully made this recipe with almond, cashew, and coconut milk. I do recommend you use a milk that is higher in fat/calories as this will yield a thicker, creamier oatmeal. Especially if you’re using this recipe as a meal, don’t be afraid to use a denser milk!

Coconut Flour: because we’re not using oats, coconut flour is going to help soak up a good amount of liquid in this n’oatmeal! It’s a very crucial ingredient with very special properties, so unfortunately you won’t be able to sub another flour.

It’s taken me a lot of trial and error with the ingredient amounts to get the consistency right, but I’ve finally nailed it! I hope you try this recipe for Vanilla Cauliflower Protein N'Oatmeal and love it as much as I do!


Vanilla Cauliflower Protein N'Oatmeal (vegan, paleo + gluten-free)

  1. Add cauliflower rice and milk to a saucepan and bring to a rapid boil, stirring occasionally.

  2. Once boiling, turn heat down to low and allow to simmer for 1-2 minutes.

  3. Turn heat back up, and quickly whisk in coconut flour and protein powder.

  4. Continue cooking and stirring until thick and creamy.

  5. Transfer to a bowl and top with whatever you like!
